Roasted Sweet Potatoes with Pumpkin Seeds

I got hooked on pumpkin seeds this past winter. I started adding them to almost everything. When they get nice and toasted they have such a beautiful flavor and it pairs so well with the sweetness of the…well, sweet potato.


3 sweet potatoes cut into chunks

5 cloves garlic cloves left whole

1/3 cup pumpkin seeds

olive oil or coconut oil

cinnamon or cumin

Maldon salt

Freshly ground black pepper

Preheat oven to 400

Toss the sweet potatoes, garlic, pumpkin seeds with oil of your choice (olive or coconut) transfer to a baking sheet and season with salt, pepper and either cinnamon or cumin. Roast til slightly browned and fork
